Samaa’s most popular breakfast treat is a coconut oatmeal porridge. This delicious mixture is filled with texture and spices to keep you satisfied throughout the day. COCONUT OATMEAL with APPLE WALNUT COMPOTE

Coconut Oatmeal: Warm, Sweet and Healthy

Coconut Oatmeal: Warm, Sweet and Healthy

INGREDIENTS:

  • 1/3 cup quick rolled oats
  • 1/3 cup filtered water
  • 2/3 cup milk (soy, rice, almond, or hemp)
  • 1 TB unrefined virgin coconut oil
  • 1 TB of agave nectar or sweetener of your choice
  • ¼ cup of raisins (optional)
  • ¼ cup of chopped walnuts
  • 1 peeled and sliced large apple
  • 2 TB of coconut shreds (optional)
  • ½ tsp of cardamom
  • 1 tsp of cinnamon
  • ½ lemon or 1 tsp of fresh 100% lemon juice
  • salt to taste (Pink Himalayan Sea Salt is nice!)

 

METHOD:

  • Turn stovetop to medium low heat, place the water, milk, and coconut oil in a pot and allow to come to a boil.
  • Once boiling, turn down to medium heat and add the quick rolled oats, raisins, and coconut shreds until the mixture is creamy. Remove from heat and sweeten to taste.
  • Over medium heat, add 1 TB of coconut oil to a small pan, add the sliced apples, walnuts, sprinkle with cinnamon and cardamom, and agave to taste. When apples are warmed, squirt with fresh lemon juice.
  • Place the warm compote on top of the oatmeal and ENJOY!
